I just received my part to replace the clock and controls on my oven (part # WB27T10409). I was able to unplug and re-plug all but 2 white wires with clear/white plastic ends at the bottom of the part. These 2 don't seem to want to come off. Is there a trick to it?

Try to pull them out, carefully using a flat blade screwdriver.

Do you mean like pry them from the bottom? I have tried that but was afraid of messing up the plastic ends. Maybe I need to try a little harder ?

Do not worry too much about that plastic insulation and try it harder.
