The evaporator keeps freezing up. I have replaced the defroster heater unit a couple of times but apparently that is not the problem. What controls the defroster heater unit to keep the evaportor unit defrosted?

If its an older unit it is a timer usually in the back of the fridge section , if newer an adaptive defrost control. Also you need to check the defrost thermostat that is connected in series with the heater.
