My washer is a Performa - I think its made by Maytag. Pretty often, when the water is filling (wash and/or rinse) the water won't stop. Even if I push the knob in to stop - it won't. I have to turn the water off at the faucet in the wall. It doesn't happen everytime - but I have to babysit the washer to make sure it won't overflow. Any suggestions?

Most likely the problem with your washer is a bad water inlet valve. It is pretty simple to replace it and you can babysit someone else with much more pleasure. - The part number for the water inlet valve AP3500345 Gene.
