My refrigerator stops cooling (frozen food starts to defrost, light is on but no fan or compressor running).

If I unplug the unit for a minute or two and plug it back in, everything comes back on and runs fine for a few days.

Any thoughts?

Since unplugging it, resets it. It sounds like an electronic problem and this points to the adaptive defrost control board (item 4 in the Liner Parts section) re: it is getting stuck in a defrost cycle.

To raise the odds of it being this part try turning the temperature control up/down a bit. Do not turn it off.
If it fires up then it could the the control thermostat.
If it does nothing then odds are higher that it is the defrost board.

Any harm in putting it on a timer to shut off for 15 min each day so I don't lose anything in the freezer until I replace the control unit?

I am not sure if this will stop the defrost cycle from running.
But even if it does the evaporator coils will freeze over and cause problems.
