My dryer gets very hot on all but the lowest heat setting (Delicates); at that setting, you can just touch it and it is bearable. I just cleaned out the vent tubes when I replaced the rear bearing and they didn't have much of a lining of lint at all. To note: it was getting too hot before I opened it up to replace the bearing.

I suspect a thermostat but this website's parts pages show two are available: AP3210790 (Thermostat-cont-elec w/m.S.) and AP2131477 (thermostat).

Which one should be replaced to fix the problem? If not a thermostat, then what?

The cycling thermostat (the one with two extra wires attached to it) controls the temperature fluctuation. If your dryer doesn't have one of those, it probably has a control board in the console, and a thermistor. The thermistor looks like a thermostat from the outside, but inside the blower or heater housing (depending on its placement), it has a rectangular sensing element. Try cleaning that off and it may work better. Your tech sheet should give you an idea of an acceptable resistance range @ room temperature.
