Previous burners working fine. I replaced one of the ceramic ignitor stems.

Every went fine, no issues. But after reassembly I have TOO much gas coming out of the simmer burner. The resultant flame is 8 inches high on LOW and bug YELLOW portion at the TOP.

What's my adjustment?

I am not overly familiar with wolf, but it sure sounds to me like when you replaced the burner, the orifice was changed out as well. Are you running on LP? If so, I would think that's what happened and if the orifice isn't changeable you will need to order an LP burner.
