system will not go into defrost there are two sensors and one defrost t-stat. how do I force this system into defrost to check amps on my heaters, (how many amps),also what tells the mother board when it is time for defrost

The only way to force it into defrost is to use a jumper wire on the motherboard. I personally do not recommend doing so. The time between defrost cycles is determined by the motherboard based on how many time the door is opened as well as how long the door stays opened.

I recommend defrosting the coils and checking ohms across the heater. There should be around 20-35 ohms or so.
