I just replaced the ice maker and it is harvesting ice but the ice cubes are coming out not frozen enough and they stick together. Is there a thermostat that controls the temp of the ice maker or a timer to adjust to let the ice sit a little longer before ejecting?

One thing that can cause this is that it’s not getting enough water. This will cause the thermostat to cycle to quickly. Refrigerator repair guide

If not check the temperature inside the freezer and see if it seems to be ok. Finally yes, there is a thermostat that can cause this located inside the icemaker.
