I have a KitchenAid SS refrigerator, model KSRB25FKSS00.

The thermostats have three prongs with wires attached to them, not counting the ground.

Which prongs do I measure the resistance readings as the cold setting is adjusted?

Do I need to pull the thermostats out, or can they be tested as is with the refrigerator running?

Here's a picture with two prongs on top with third pointing toward viewer:

Have you looked under the unit (compressor compartment) , behind the kick plate and the rear cover to see if the wiring diagram is tucked/taped there.

What is the problem/symptoms of the unit.

Thermostat can often be checked with a meter using ohms.
Trouble is that if they are intermittent just a slight nudge can close/open contacts that are sticking.
Also getting to the sensing bulb so you can heat it up and cool it down can be a pain.
