My daughter has bosch exxcel dishwasher it has stopped washing the dishes. She has cleaned it all checked filter and still nothing.

I found in the bottom of my dishwasher a black oily sludge collection, is there something I need to do to prevent from happening again? I use Cascade liquid detergent and Finish Jet Dry. I use the express wash cycle because I rinse my dishes before loading. The dishwasher is 5 years old, model SilencePlus 50 dBa.
