Where is the defrost timer located on my fridge?
My best guess is it must be electronic.

I'm testing the defrost timer, defrost thermostat, and defrost heater because my freezer side keeps icing over the evaporator coils.

To make the defrost thermostat sufficiently cold, I'm surrounding it with a ziploc bag of ice water. The ohmmeter isn't budging when I measure it either in the bag or out. Does this mean I have a bad thermostat?

It may not get cold enough with just ice. You can bypass the defrost thermostat and see if the system works.
