Question about thermostat assembly connection

Main Symptom: replacing thermostats assembly
What happens & when: replacing previous part. The old thermostat assembly has 2 prongs for wires, the new assembly has 3. Only have 1 red and white 1 wire to connect

L125-31C. It was the same product number that was on the thermostat assembly that was removed

Do you have the part number for the thermostat. A thermostat could have the same marking but not be the same.
