Cooling fan stops runninng about 30 minutes after oven bake start.
Cancel oven let it cool.
Start oven again (325 degrees) fan runs again for about 30 minutes then quits.
Is there a thermal cut-off in circuit that would affect tge fan ?

There is no separate thermal cut-off unless they have added one and not bothered to update the wiring diagram. This does happen once in a while.
I would check the wiring connection to/from the board to the fan.
If OK then I would replace the fan.
It could be thermally protected internally.
Also could be that a winding wire is broken and it opens when it gets hot and closes when the motor cools down.
