If it is not letting the ice slab release, it may not be going into the harvest mode where the system stops, you hear the reversing valve actuate where it makes the evaporator plate get warm and release the slab. Does the ice look normal in size?

No, the ice sheet looks much thicker than it should be.

Does the unit stop circulating water and come to a complete stop? The evaporator thermister located underneath the water plate may not be reading correctly, or the board has failed to read the information from the thermistor. No, the water just continues to run over the evaporation plate, the sheet of ice continues to get thicker and thicker until I turn of the machine. When the sheet melts some it slides down onto the cutter grid. If I then turn the machine back on the grid warms up, cuts the cubes, and the water starts flowing over the evaporation plate again.

Okay, so the ice machine never recognizes that the slab is thick enough to harvest.
it has to be the evaporator sensor or the board. I gave you the sensor part number in a previous response. I would start with that; if that doesn’t fix it, it is the board. On page three of the tech sheet, it tells you how to check the sensor.
