A different thermostat may work but I do not know where you would get one.
I do not think that running a unit with the control thermostat always shorted would be a good idea as compressor are not made to run all the time. Also it would cost you a small fortune in electricity.
It may be physically impossible for the unit to get to such a low temperature.
You could check this by unplugging the unit and then shorting the two wires at the thermostat together. The compressor then should be always on except when the unit goes through a defrost cycle. You will then have to monitor the freezer temperature to see how low it will go.
Trying to run a unit at this set point may cause other problems re: compressor overheating and frost build up.
