My Whirlpool dishwasher sometimes (like 1 out of 10 times) overfills. When this happens it is because the fill did not shut off and overfills the tub. Canceling or opening the door does not stop the fill. We can drain the tub, and with same load, start it up again and it works fine. So I know it’s not the arm hitting dishes wrong. The overfill switch and float appear to be working. So does it seem like the control module is defective?

No, I would say that your water valve (Item 7 in Section 6) is intermittently sticking open and needs replacing.
My reasoning is that the float switch and opening the door, both should have killed power to the valve. I cannot see both of these safeties failing. So I think the valve is staying open with no power to it which means it is sticking open.
