Why does the defrost cycle not also defrost the food in the freezer? If I understand it correctly, those freezers periodically heat up to melt the frost, then cool off again. How can this be good for the food...?

The thermal mass of the frozen food keep it cold for the defrost duration. The freezer fan never works during defrost; If it did, all your frozen food would defrost.
