I am looking to purchase a refrigerator, change the thermostat to maintain 55-65 degrees (F). I want to store bulk and finished chocolate and need to maintain less than 50% humidity. Can this be done easily? and any suggestions on which unit may be best? Otherwise I have to look into purchasing or building a walk-in style unit, large wine cooler, or possibly a floral refrigeration unit, all of which will turn into a more substanstial investment.
