Want To Replace The Temperature Sensor.
Do You Cut The Wire On The Old One And Splice The New Wires In With Electrical Tape?

Just using tape isn’t good. The best way to replace this is to use a squeeze bell connector. Fill the connector up with some type of sealant such as RTV silicone before squeezing it onto the wires. If you don’t have the tool required to squeeze the connector on you will be better off using wire nuts but still fill it with sealant before you tighten the nut. The reason for the sealant is to keep moisture from getting to the wires possibly causing the sensor to get a false reading. Refrigerator repair guide
