Kenmore Dryer
Model number: 79681282310

My dryer keeps spinning and only stops when I open the door.
While it's circling the air is cold too. It does not matter if I press to start or not or if I set any parameters - it spins cold and opening the door or unplugging is the only way to stop it. 

- I cleaned all lint from the lint collector, opened the exhaust on the back, and cleaned up all the lint from everywhere. The airflow is good.
- I let it sit unplugged for several hours. 

Nothing helped. There must be something broken.

Could you please recommend the best way to troubleshoot?

I am not sure but it sounds like a relay on the control panel is stuck or the timer has a set of contacts stuck in the closed position. No easy way to troubleshoot it except to replace the timer assembly (first) and if that does not correct the problem you should consider replacing the dryer as control board are fairly expensive to replace.
