I'm about to go out and get a multimeter, some ice, and a cooler so I can start to do some diagnostics on this fridge.

That being said, I've been looking for a service manual for this particular model so I can figure out how to get into diagnostic mode and check if there's any obvious problems before having to empty out the fridge, buy a cooler (the multimeter I'll use anyways), and spend the afternoon diagnosing this. If anybody could provide me some assistance with this, it would be much appreciated.

After getting all the equipment I needed, I've now confirmed that it is indeed a defrost issue I'm having.

So far I've checked for continuity on

  • The Bi-metal thermostat
  • The evaporation fan motor
  • The Cold Control
  • The capacitor

There doesn't seem to be any issues with any of those. I saw a "service pointer" here mentioning to remove a resistor. I'm gonna try that as my next step, but I'm wondering if there's something obvious I'm missing here.

After re-assembling everything, removing the resistor from the ADC seems to have solved it. We'll see about that in a week or so though.
