I recently received a Whirlpool GD5NVAXSA02 from a house that was going to be torn down. It had been shut off for a few months. I brought it home (on its side for about 45 minutes). We cleaned it upright for a few hours and plugged it in. After about 8 hours it gets down to 2C and then the defrost kicks on and it heats up again. I ran it for three days and the same issue. Today I verified that all the fans were running. I took the cover off the freezer and after about an hour of running only the first evaporator coil was covered in frost. Is this a sign of low coolant? is there something else I should check first? Should I let it sit a few days and try again.

Yes, it sounds like its low on freon.
If you lay a refrigerator on its back or side, you really should leave it upright at room temperature for 24 hours. It gives it time for the oil to drain back into the compressor. Otherwise the oil can be forced up the lines restricting them. That also leads to a no cooling situation.
