I have a large 8" element that keeps burning out. I have replaced it with a universal element but upon checking the universal is 2100W and the original is 2700W. Does this make a difference? I have replaced the receptacle also.

The infinite switch is probably your problem they burn out often and you will replace the element over and over again if the switch is the problem.
