The main control knob was broken off during a recent move. I need a replacement "stem" that the knob pushes onto. KitchenAid does not show this part on the diagram. Any ideas?

Unfortunately no, I don't think that part is separately repairable.

You may be able to 'drill and fill' with a post of some type that will allow you to turn it, otherwise I am afraid you are looking at the new control unit.
