No matter what cycle I put the washer on it will stop before rinse cycle and still be full of water. Can you tell me what might cause this? (top loader)

You have the classic symptoms of a bad lid switch. Fortunately it is an easy in inexpensive repair.

I replaced the lid switch and the washer spins and rinses fine, the problem now is the knob seems to be off. When I turn it wash it spins or to rinse it washes.

Well that is unusual, and nothing you did in fixing the lid switch should have caused a problem, but it may be your timer has to be replaced. First take the timer knob off and make sure it is okay.
