I have changed to things in the freezer and now I believe my problem is in the fridge with the timer where you adjust your temp. Any help would be greatly appreciated.

If you have already replaced the defrost thermostat and defrost heater,You don't have a timer you have a motherboard which controls your defrost cycle.
