What part would you suggest I start with? The evaporator coil is frozen, more so at the top than the bottom. Is this a thermistor, or defrost thermostat? What values should I get when checking?

There are four things that will cause a defrost problem and they are the evaporator thermistor, the main board, the defrost thermostat and the defrost heater. More often than not it is the heater. You can take the heater out and do a bench test or you can test it directly from the main board. This page will help Refrigerator Defrost Problem Diagnostics
