After about 3 weeks both become warm. Then, if I unplug and let sit overnight, then both are cold for another three weeks, and then become warm again.

Only a very, very thin layer of ice forms on the inside of the freezer so I don't think it's too much ice forming.

Any ideas?

It is not the amount of ice in the freezer that is of concern.
It is the amount of ice on the evaporator coils that causes problems.
You will have to remove the covers to see the evaporator coils properly.

Sounds like a defrost problem so take a look at your coils after it has been running OK for a couple weeks.
