As the title suggests, my dryer runs but will not heat. I have checked the following:

heating element, has continuity
Thermal Cut-off, has continuity
Hi-temp thermostat, has continuity
Thermal Fuse, has continuity
Thermistor, does not have continuity (I don't believe that it should)

Does anyone have any suggestions about what else I could look for?

Also, I have confirmed that I have 240V to dryer while running.

Check your service sheet found behind the control panel. Most thermistors at room temperature are 1000 ohms, just measure, if way off replace it.
If ok you just might have a burnt wire somewhere.
