We just re-located a GE Profile 1800 series microwave to another residence, switched to exhaust from recirc, and everything was working, we thought, prior to installing, and now will not heat. We didn't jar it while moving. I fit it is a magnetron as everyone else has had trouble with, how does it become defective?

Most of the modern microwave ovens have a high voltage that causes a magnetron cathode current to be over the rating of 1000watts.
This excessive current causes metallic ions to boil off the cathode and get deposited on the internal glass surface where they eventually cause a short, thus burning out the magnetron.
Either that, or the cathode material loss causes it's efficiency to go down causing a reduction of microwave power.
In your case, if you unplug the connector to the magnetron, turn it on and observe a reduction of noise= shorted magnetron.
Either that, or the move may have jarred loose the cooling fan.
