I have a commercial APW Wyott AT-10 conveyor toaster oven for my restaurant. I think I had the wiring all screwy and thus some problems with it. I have since found a wiring diagram online and intend on wiring it properly tomorrow.
My question is this...my infinite control switch for the bottom heat went bad. I bought two new ones (one for the top heat and one for the bottom heat) and installed them today. The oven will only run at 100% heat. What I found out is that the lady sold me the wrong infinite control switches. My oven is 208V, she gave me 120 V. Would this be a reason as to why the variable heat control knobs do absolutely nothing to turn the heat down?
What would happen if anything if I left in the 120 V infinite control switches?

The infinite controls are rated with a variable current cutoff at a specified voltage as a function of setting. If these are rated that way, you have the wrong controls.
Basically most controls of this type are a current control, not controlled by the voltage in.
For example, if you are trying to adjust the power to a 2KW heater with a 5KW control, it might never shut off, the minimum power setting might be 2KW.
