If I will be working on replacing the coils in my gas dryer do I also have to shut off the gas line and remove the gas line from the dryer? I know I have to unplug the dryer from outlet but wasn't sure about the gas.

No. You can replace the coils while the gas is connected. You should, however, check to see if you can smell gas, while you're working down there.
To replace the coils, remove the wiring connectors (they should be different enough to prevent you from re-connecting them wrong). Remove the screw(s) holding the bracket on the coils, and lift the old coils away. Installation is just the reverse.
