These unit dry using a process called condensation drying. Basically, this means that the water evaporates off of the dishes and condenses onto the side walls and within the vent that is mounted to the right side of the tank. You can see the vent if you look into the unit, on the right.
There is no active dry process, i.e. there's no heater or fan that turns on at the end of the cycle. The reason is, condensation drying relies on the water heater heating the water up to 161°. After a while in the final rinse cycle, the dishes will also be at 161°. After the rinse aide (Jet Dry) sheets of most of the water, the rest of the water will evaporate after enough time. Unfortunately, dishes that can not retain the heat will cool off before they dry off. Examples are thin-plastic, tupperware-like dishes, as well as wood spoons, bowls, etc. However, metal utensils, glasses and plates should still be pretty hot - even 45 minutes after the cycle has ended.
In summary, for best drying results, use Jet Dry, wait a little while to unload the dishwasher - around 45 minutes should be enough and understand that not all dishes will come out bone dry.
I have a bosch and always have a towel handy when I put away my dishes.
