I want to replace a bad gas griddle thermostat for a friend and the original is, of course, no longer available. The major online auction folks had a listing for what was described as a substitute and my friend paid $400 for it, and it does look nearly identical but the numbers don't match the original. These are capillary tube type that just have electrical connections that are either zero or infinite resistance (no variable resistance, just on or off), so I am tempted to try it. The original was Invensys brand and marked 3.6 amp and 120 volts. The new one is Robertshaw and says 25 amps and 250 volts...I presume these are max. limits so bigger numbers are fine.

What could go wrong? Maybe just the temperature calibration would be off a bit. Anyone see anything here that could be risky?
