My family has a built-in ice maker, it's a Sub Zero 315IP.

It recently stopped working properly - ice wasn't being made... water was running over where the ice gets formed, a few ice cubes were at the bottom, but that was it.

A Sub-Zero recommended repair company came to the house, charged $95 just to come give an estimate. They quoted $900, saying that it's $200 in parts and $600 in labor.

I believe they said it was a freon issue, but I'm being told all of this info through my parents, so I don't know the details.

They are supposed to be coming next week to do the repair, but I can't shake the feeling that this is a total rip-off. But there is almost no information I can find online about ice makers like this.

Does this all sound realistic? I noticed today that the machine is producing a bit of ice... there's maybe... 25 cubes at the bottom right now.

Sorry but I cannot be of much help.
Never worked on SubZero and very little experience with ice makers.

Below is a link to a site that has some ice maker manuals which may be useful to you.

You will have to join the site and be logged into be able to download a manual.

The symptom does not seem to match the diagnosis.
Seems to me it may just be too much water entering the cube section/plate but then I know next to nothing about these units.
