Looking for a repair manual/parts diagram for the Kenmore 11048722791 washer. Seems like it's the pressure switch or hose -- it stops overflowing when turned off.

Yes, I agree on your diagnosis. This is a Whirlpool made compact World Washer. I don't have manuals for your exact model but here is a link to the parts manual of one that is essentially the same as yours.

I have not serviced these washers so can't advise on specifics. Also included a tech sheet of a model very similar to yours. For actual part numbers for your specific model, go the the sears parts direct website and plug in your model number.

As it turned out, it was pretty easy to repair. We turned the machine on its side and saw a somewhat thin hose (~3/8") dangling toward the bottom of the machine. Sure enough, it was the pressure switch hose. It seems there was no clamp to hold it in place on the pressure switch barb. The barb was located on the top of the machine in the corner, just above where the hose was dangling. It's not hard to remove the top -- there's 4 screws in back. You just take out the screws, push the electric cord holder down and the top comes off enough to reach the pressure switch barb. (The switch itself is not visible.)
