One last update that possibly may help someone with this issue. I didn't need to pull out the oven, as the wiring diagram was tucked in the control panel area which clearly showed the wiring going to the probe, so we were able test from that point (0 ohms), but the issue itself is moot, as we ended-up replacing the unit.
