Initial problem was that the fridge was warm and the freezer was cool.

Condenser was kicking on with the defrost timer. Found the evaporator fan was not turning/ blowing cool air into top fridge compartment.

With the back panel off of the freezer section, I attempted to test the continuity of the thermostat, but got no resistance. I did not use ice water though and was advised that at room temp, the thermostat would be open.

With the back panel open, I turned the evaporator fan with my fingers and it spun freely. Plugged fridge back in and the fan started running and the fridge was cool overnight.

Today, fan was not running, attempted to play with defrost timer again, let the defrost cycle run and the evaporator fan is now running again! Did it freeze up before defrost?

My question is, would there be any reason for the evap. fan to stop running while in defrost mode? Should it run continuously?

If it is supposed to run continuously, then my bearings must be flat and it is stopping and having trouble starting again, my spinning of the fan got it going again when I initially played with it.

If stopping during defrost mode is normal, then is the timer to blame? Would any of these normal operations continue with a bad thermostat? One thing I noted was that the thermostat seems to be bulging a bit.

It always stops during defrost but should start up again when the unit comes out of defrost.

Does not run on defrost.
On most units it only runs when the compressor is on trying to cool the unit down.

Could be but a better test would have been to spin it with the power on. If it started up then you know the fan is bad. Just be careful that you do not get your fingers in the fan blades.
Also note that on some units the fan shuts off when the freezer door is opened.

Which thermostat?
If it is the defrost thermostat then it should be replaced.
I cannot say. I would need to find a wiring diagram. On some units the fan actually gets power through the defrost circuit when the unit is not in defrost.

Best check is to check if the fan is getting 120 volts across it.
If it is and is not turning then it is toast.
The above assumes that it is an AC motor and not a DC motor.

See the attachment for the tech sheet.

On this unit for the evaporator fan to run the circuit part is:
L1 Hot
Freezer thermostat
Evaporator fan motor
Defrost thermostat
Defrost heater
Neutral

So a bad defrost thermostat will cause fan problems.
When a defrost thermostat is bulged it means water has entered it and usually screwed it up. It can cause it to go intermittent.
In any case it needs replacing even if it is not causing your current problem.

Thanks very much. That would make sense to me as well.

I did spin the fan when the power was on (but fan not running), but I wasn't sure if it was in defrost mode or not. I guess I should be able to tell by the sound of the compressor. The fan spins freely but did not start up, so the bearings being suspect is probably inaccurate.

Will replace the defrost thermostat, thanks!

The fact that the fan stopped when the line that the defrost thermostat froze up also makes the defrost thermostat suspect. When I disconnected the thermostat the first time and plugged it back in, I must have given it time to defrost itself and it became functioning normally, it must have water in it.

I would check the thermostat before installing it.
Otherwise if you get a bad one you could spend hours if not days going in circles trying to fix the unit.

Either holds it metal face onto an ice cube or put it in a freezer.
Then check that it is 0 ohms when frozen.

Some folks like to immerse it in a glass of ice water but I am not a fan of this method for obvious reasons.
