So this is the issue we're having:

The freezer is working just fine. Very cold and all is frozen in there as it should be but the fresh food part of the fridge is cool, but not COLD like it should be and the setting is at "7", which is the coldest setting.

I replaced the Damper control assembly, cleaned the bottom condenser assembly, removed the lower back panel and clean as much of the lint as I could back there. The compressor is warm as it should be. The fan back there is running good and pulling air out.

There is no frost on the inside back panel of the freezer.

I'm trying to save money by doing this myself so I don't want to buy more parts in hopes I get lucky and replace what's defective.

Is there a way to test the Thermistor or defrost thermostat?

You can then check it with a meter for the correct resistence.

[COLOR="Blue"]or defrost thermostat?[/COLOR]
Force a defrost cycle if the defrost heater comes on then the defrost thermostat is OK.
Note that it must be frozen as it opens just above freezing.
If you remove the cover in the freezer to inspect the evaporator coils and they are not frosted/iced over to the point that the fan cannot pull air through them then you do not have a defrost problem.

Check that the opening lower down on the separating wall is clear on both sides. Blocking it with food will impede the proper air flow between the sections.

Check the actual section temperature with a thermometer.
The freezer should be between 0 and 5 degrees F.
The fresh food should be around 40 degrees or a little less.

You could also run the diagnostics to see if something shows up.
