Sorry but I have never tested a defrost thermostat with 4 wires so I appreciate if someone can help me on how to test this. Thanks in advance!

That is a sensor and not a thermostat.

This item may have a thermal switch and an internal bias heater, very strange. Two terminals should be shorted at freezing temps, the other two should show resistance.
