My Whirlpool side by side fridge is making a very loud clacking sound that can be stopped if you unplug a set of little wires behind a panel on the left upper inside of the fridge section. You can also see what is making the noise...a white plastic flap inside a housing located in the left upper wall of the fridge. Would unplugging and leaving upplugged this little set of colored wires cause damage until I get a repairman in to fix it....what is the problem and what does the little flap control

A model number may help others help you.

Sounds like you may be referring to the damper.
It controls the amount of cold air that enters the fresh food side of the fridge.
Unplugging it should not damage anything.

You will have to monitor the temperature in the fresh food section so that you do not freeze things or let things get too warm.
The fresh food side should be close to 40 degrees F.
