I need help wiring up the receptical assembly. The current wires on the recepticles all looked dark or black. I bought High Temp wiring which colors are black,white and red. I have used black and white for the recepticles, but have not tried to plug in the Terminal Block. Can you tell me how I can tell what wires to use and are both sides of the recepticles hot. I tried to check the Terminal by turning the control knobs on for the burner and used an ohmeter to see which side was hot , but sparks can from the the terminal so I quit. Thank You for your help!

The wires should go back to your infinite control switch. FYI: Your house power is actually two 120 volt power supplies which are 180 degrees out of phase and they share a common Neutral. Neutral is white. L1 and L2 power are black and red. When one power side lets say L1 is at positive 120 volts the other side (L2) is at negative 120 volts. This is then the 240 volts (L1 to L2) that are used to power the elements and it is controlled by the infinite switch.
