Finally figured it out, I had to lift up the panel and rotate it out of the hinge with the glass top.
I inspected the control panel, all connections wiring and the ribbons but did not see and defects, burn marks, etc. I ended up just taking out all of the connections and re-attaching them.
So far so good, no F2 E1 error, was able to run the oven for an hour at 400 degrees with no issues. Hopefully it was just a loose connection that was caused by the heat of the self clean.
