My freezer coils freeze up after a week of continous operation. I have replaced the defrost timer already with no luck in my situation. Have checked defrost heating element for continuity and its good. Could it be the defrost thermostat?

Yes. If the defrost thermostat doesn't close then the heater element will not go on. You can strip some insulation from each wire going to the t-stat and short them out (bi-pass the t-stat and then put it into the defrost cycle and make sure the heating element comes on
