I have a fairly new dishwasher and a mouse has chewed thru some wires. From the look of it, all of the wires are included in a single harness....with plainly identifiable plugs and also color coded. I think the best fix is to replace the wiring harness for the entire unit....but I'm having trouble finding the harness to purchase. Is this part available?

I too would replace the complete wire harness. Unfortunately, I have no parts list or part number for the wire harness, either. You may want to contact the manufacturer, they would be more able to assist you there. Good Luck, :) :) :)
