Came home today to hear a squealing noise from under the fridge. The noise is coming from a small part below with part # 0628518 on it. Based on a search on this site it is a timer. My main concern is: is this timer likely to go out causing the refrigerator go out (losing food) or set the house on fire while I'm ordering a part? It is quite warm but you can hold it in your hand for now. Should I unload the fridge and turn it off?
Also, what is it timing?

I don't think you are in any danger of it catching fire, but it deffinatly could stop and cause you to lose all your food, depends where it decides to stop at. This timer controls when the defrost cycle starts.

Is there anything I can do like disconnect the timer to prevent loss until I can get a new timer, hopefully tomorrow?

FYI: The part number you listed (0628518) is a partial part number, and if you search the net for it you won't find much. The full part number is actually 5300628518. This particular timer enables the defrost cycle so that it runs 21 minutes out of every 8 hours. Note also that if it stops running while in the defrost cycle, your refrigerator will never re-enable the compressor and your food will get warm real quick.
