My GE freezer goes through cycles where it stops getting cold and if you unplug it and plug it back in it works again. I had a tech over and he said if it happens again to change the motherboard. Do I have to defrost the unit before I change the board and if so how do I do it?

If everything shuts down when it fails, most probably a bad evaporator thermistor AP3185407, a thin, white thing clipped to the evaporator.If it still fails, replace the motherboard.
