New motor installed but because the dryer is old, we are unsure how to wire the start switch to the jumper harness. The dryer in the video is very different from ours.

Based on the wiring diagram for your model, the motor should be wired like this image.

So do we detach all the wires from the switch completely and hook them up to the jumper? Where would the orange wires go?

The double orange would go to terminal 2 as seen in this revised image.
