Is the evaporator (freezer) fan running? It should be on when ever the compressor and it's fan are on.
What is the actual freezer temperature? |

As far as I know it only fills once so water pressure should not cause non solid cubes. |

Looks like hollow cubes could be due to low flow.
I took another look at the ice maker and it does fill from the far side away from the thermostat, so check that all the cube positions are filling with water. |

I would try replacing the water filter. |
