I'm assuming, we are talking about the upper oven. The lower oven operates by the oven thermostat.

There is no "sensor/switches in the back of the oven". Who ever told you that did not know how your oven works or just lied to you, hoping to get more money.

What part did you replace? You wrote "the control panel". The part which controls the oven temperature is a control board. If you replaced the control board and not the control panel, then the part you've installed is defective. Try to exchange the part.

Oven will heat up to above selected temperature and then turn off going below the selected temp. When about 40C below selected temperature see the heat indicator come on (and hear click) but indicator goes off quickly and the oven will continue to cool down, not heating up again. Replaced sensor in oven but did not fix.
Had appliance repair out with their Whirlpool phone help card and determined that the control panel (digital) probably needed to be replaced, but no guarantee that it was faulty. Panel was replaced (installed myself to save $75) with rebuilt control panel and same thing occurs, heat up to temp, cool down, turn on and quickly turns off.
Have not called service back out yet since they indicated before leaving it also could be sensor/switches in the back of the oven and would need to be pulled from wall to check. Already $400 into oven ($315 part/$90 service) and before putting another $100 or so in service and who knows parts cost trying to determine how sensor/switches in back of oven could be causing this....
